How can I create a new project?

You can create new projects through the admin client. The easiest is to build a project based on an existing project, copying the same structure and settings as the reference project.

In the administration, under the "Projects" folder and pick the closest project structure you would like to start from. Select "Create Branch or Copy" under your project name, then clone this existing project keeping or not the content.

Note: Don't forget to assign the users to the project you just created otherwise, with the option "keep User Access" unticked, nobody will see the project among the projects dropdown in the user interface of the normal application.
